Serves: 3 – 4

Preparation time: 5 minutes

Cooking time: 25 minutes


  • Coconut oil or any other preferred oil for cooking the veggies
  • 300 grams of organic spelt pasta, or whichever yummy pasta you want
  • 2/3 cherry tomatoes
  • 2/3 mushrooms
  • 2/3 sweet red peppers
  • 1 red onion
  • 1 tablespoon of chives
  • 2 garlic cloves
  • 1 – 1 1/2 tablespoons of chilli powder or a chopped red chill
  • 1 tablespoon of the sugar or sweetener of your choice
  • Splash of balsamic vinegar
  • 1 tablespoon of tomato puree
  • Half a can of chopped tomatoes
  • 1 cup of water
  • Lemon


  1. Firstly, cook chopped red onion until translucent with coconut oil in a hot pan, mixing frequently
  2. Next, add garlic and peppers roughly chopped, cook for a further 2 minutes
  3. Add all the spices, sugar (or sweetener) and balsamic vinegar mix for a minute or two, adding the water before the spices stick to the pan
  4. Then, add the puree and mixed well and add the chopped tomatoes
  5. Leave the veggie sauce to simmer and cook the pasta
  6. When the pasta is finished, check the veggies are soft and take off the heat, either add to a food processor to chop further if you prefer less chunky and runnier sauce, or leave it as it is if you prefer chunkier sauce
  7. Drain the pasta add some lemon juice to the pasta for a refreshing kick, I find this pleasant when serving pasta with a spicy sauce
  8. Finally, serve and enjoy, perhaps adding some spinach or yummy vegan cheese!
