I’m completely aware that I’m jumping on a bandwagon here, but since I enjoy watching these so much on YouTube and reading about them on blogs, I’ve decided to drop my own. Just to clarify this is based on what I eat during a day off work, since I work 12 hour shifts my in work diet can be a bit hectic to photograph.
So after working all weekend I woke up Monday ready to laze about in bed with this sexy fella, and you know I had a good time.
Ingredients: based on two servings
- Two-three bananas
- A good handful of fresh strawberries
- A cup full of frozen blueberries
- A tablespoon of cocoa powder
- Half a cup of almond milk.
Just wiz this up in a blender and hey-presto smoothie bowl at the ready, top as you desire I enjoyed this smoothie bowl with hempseeds, chopped strawberries, shredded coconut and just a sprinkling of cocoa powder. This was one yummy bedfellow!
Then I managed although reluctantly to leave my bed and make Joe and I this easy and delicious Thai green curry noddle bowl.
This is just a bit of a cheat meal, in the sense that it’s just cooked with a ready bought paste but it’s excellent all the same.
All you’ll need is:
- Thai green curry paste
- Coconut milk
- Frozen veg
- Two packets of vegan wok noddles
- Sesame seeds and poppy seeds to top
- Sesame oil to cook the veg in
I just cooked the veg up in some sesame oil (my favourite for any type of wok dish) then added the pasta coating all the veggies, then added the milk and noddles- yum yum.
During the afternoon Joe and I went for a walk around Lancaster and by the time we came home it was about time for Amy to get home from work. All a bit tired and cold we decided to have some serious comfort food- I’m talking lasagna and chips, with a good dose of trivial pursuit and wine.
A seriously good afternoon.
The lasagna is on another level- tofu cheese and homemade chunky tomartoe sauce- since there a lot of steps to the bad boy, I’m going to have a separate post explaining how to make it.
