Spicy Tomato Soup

‘Because sometimes Heinz just doesn’t cut it.’

Ingredients:

  • 3 sweet peppers
  • 2 onions
  • 6 cloves of garlic
  • 1 handful of fresh basil
  • 1 green chilli
  • Salt and pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of chilli flakes
  • 1 teaspoon of oregano
  • 3 stalks of celery
  • 5 large tomatoes
  • A handful of small tomatoes
  • 700ml of water

Optional

  • Sundried tomato paste
  • Olives

Serves: 4

Preparation time: 10 – 15 minutes

Cooking time: 20 – 25 minutes

Method:

  1. Firstly, chop all your ingredients – it doesn’t really matter how rough you do it.
  2. Next, add the onion and celery and cook for 5 minutes or until the onions turn translucent.
  3. Now, add all the other ingredients, mix these well and cook for 5 minutes
  4. Add the water and stir; place a lid on the pan and allow to simmer on a medium heat for 20 minutes.
  5. After the time has elapsed, take off the heat, add the basil, and blend with a hand blender. I usually only blend about two thirds as I like my soup slightly chunky, but blend it how you prefer – live your life to the freest.
  6. Serve with bread and enjoy!

Notes:

  • I would highly recommend serving this with fresh bread and homemade hummus.
  • Taste throughout and add salt and pepper as needed.
