Black Bean Fajitas

Ingredients – Seasoning:

  • 1 teaspoon of paprika
  • 1 tablespoon of oregano
  • ¼ teaspoon of cayenne pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • ½ teaspoon of chilli flakes
  • 1 teaspoon of brown sugar
  • Salt and pepper

Ingredients – Fajitas:

  • 3 garlic cloves
  • 1 red onion
  • 2 bell peppers
  • ¼ cup of frozen sweetcorn
  • 2 large tomatoes
  • 230g of drained black beans

Makes: 4 people

Preparation time: 10 minutes

Cooking time: 10 – 20 minutes

Method:

  1. Firstly, mix all the seasoning spices together in a container and set aside.
  2. Now, begin by chopping all the vegetables, garlic, pepper, and onions into strips and the tomatoes into chunks.
  3. Then, cook the pepper and onions until the onions become translucent
  4. Now add the garlic, seasoning, tomatoes, and black beans and mix well.
  5. Serve on wraps with guacamole, salsa, and vegan cheese!

Awesome vegan black bean fajitas!

Notes:

  • I highly recommend serving this with sweet potatoes either baked and added to the wraps, or as fries.
  • If you don’t have all the spices, most fajita spice packets are vegan.
  • If you like a little bit more heat, add a little more chilli flakes.
